    I have made this recipe just recently and my family loved it!

    Reminds me of the good ole' days in Grandmas kitchen!


    FRIED APPLES

    7-8 APPLES
    1/2 STICK OF BUTTER
    1/2 CUP SUGAR
    1/2 CUP APPLE JUICE
    1 TSP CORN STARCH
    1 TSP CINNAMON
    1 TSP VANILLA

    DICE APPLES INTO LARGE CHUNKS WITH PEEL. MELT BUTTER IN SKILLET. ADD SUGAR OVER ALL. COVER WITH LID AND COOK UNTIL TENDER (ABOUT 15 MIN)

    MIX REMAINING INGREDIANTS TOGETHER AND POUR OVER APPLES TO THICKEN.

    SIMMER UNCOVERED FOR 15-20 MINUTES

    This sounds really yummy and I'll have to make it when I get some apples, probably tomorrow. I've fried apples before but not with all the ingredients you do and I bet it's great. I'll let you know.

    I got this out of the paper a few weeks ago and we all love it.

    Easy Microwave Potato Casserole

    In a greased casserole dish slice one layeer of potatoes, dot with margarine and garlic salt and pepper. Add a layer of sweet Vidalia onions, dot with butter or margarine. Make as many layers as wanted. Cover with plastic wrap and microwave till done, around 10-12 minutes. Cooking time may vary. Take out and layer with shredded Cheddar cheese and place in microwave till done.


    This is real easy and with me going back to work tomorrow at school, I'll probably be making it often.

    lynnw - Thank you for moving this thread back up. I'm going to find a few of Mamabing's recipes and post them in her honor. Her hubby was kind enough to send me all of the recipes she loved making for her family.

    Jamaican Jerk Chicken for 2

    Jamaican Jerk Chicken for two

    1 Jalapeno Pepper, seeded and chopped
    1 1/2 green onions, chopped
    1 T ground allspice
    1/4 t cinnamon
    1/4 t nutmeg
    1/4 t salt
    1/8 t pepper
    1 garlic clove
    1/2 t fresh ginger
    1 bay leaf, crumbled
    1 T oil
    2 boneless, skinless, chicken breasts

    In a food processor, combine all ingredients up to the oil to a paste. Add the oil and puree until smooth. Rob on both sides of the chicken and let stand for 30 min. Grill or bake at 350 for 30 min.

    Tomato Basil Concasse for two
    1 c tomato, seeded and chopped
    1 T plus 1 t olive oil
    2 t red wine vinegar or balsamic vinegar (I used 1 T of balsamic)
    2/3 c basil leaves, chopped
    2 c baby spinach
    Sprinkling of low fat mozzarella

    Toss tomatoes with olive oil and vinegar with salt and pepper to taste. I let mine "marinate" for a couple of hours. When ready, toss with basil, spinach and cheese.

    Hot Pink: I just started reading this thread and got to page 40 before posting a couple of recipes. Has mommabing died? Loved reading her posts and have printed out many of her recipes. I'll read more tomorrow and will post some of my recipes as well.

    Hi ginger1502...yes, mamabing died, probably 3 years ago, maybe 4. I've tried to go thru this thread but it took several days. One of my faves of hers were the blt wraps. I can't remember the page.

    There are so many good recipes here that I now use.

    ORANGE DREAM FUDGE

    3 cups white sugar
    2/3 cups heavy cream
    3/4 cups butter
    1 (7oz) jar marshmallow creme
    1 (11 ounce) pkg white chocolate chips
    3 teaspoons orange extract
    12 drops yellow food coloring
    9 drops red food coloring

    Grease a 9x13 inch pan.

    In a medium saucepan over medium heat, combine sugar, cream, and butter. Heat to soft ball stage, 234 degrees.
    Remove from heat and stir in marshmallow creme, white chocolate chips and mix well until the chips melt. Reserve 1 cup of mixture and set aside.

    To the remaining mixture, add orange extract and food coloring. Stir well and pour in prepared pan. Pour the reserved cream mixture on top. Using a knife, swirl layers for decorative effect.

    Chill for 2 hours or until firm. Cut into squares.


    This tastes just like the dreamsicle popsicle.
    I made this 2 weeks ago and it was gone the next day. It's different from most recipes for fudge and very good.
